Welcome! My name is ellee ven and I am a self proclaimed groovalutionary. In the Groovalution kitchen series, I am going to share with you suuuuuuper easy recipes that help keep you fueled and inspired all day. My Cashew and Vanilla Oh My God I Can’t Believe It’s not Butter recipe comes straight from DeliciouslyElla. She’s a vegan from the UK who has tons of colorful and delicious recipes that I love.

Homemade cashew butter is so much yummier than the ones you buy. The texture is 11x creamier, and when you put the vanilla into the mix everything is taken to the next level and you end up with the grooviest, most versatile spread. I love it because a little goes a long way and it’s a healthy way to satisfy your hunger.

Honestly it’s outrageously good. It tastes and smells like cake mix.

You can add it to toast, dip dates into it, drizzle it on just about anything, blend it into smoothies, add it to bananas or just eat it straight from the jar!

All you need is the JAR a baking tray of cashew nuts And 2 teaspoons of vanilla powder.

Let’s begin I have Pre-heated the oven to somewhere between 350 and 375

Now that the oven is hot, place the tray of cashews in to bake for about ten minutes – until the cashews are golden brown but aren’t burnt. Let them cool.

Once cool, place them in a food processor with the vanilla powder and blend for about ten minutes, until the mix is totally smooth and creamy. It’s so tempting to stop blending once it gets sticky but let it keep going until it’s runny, – it’s so worth the extra few minutes!

You do need a really strong processor… CASHEWS do have some protein but the bullet points are that Cashew nuts are

● High in iron, magnesium, zinc, copper, phosphorus, and manganese.

● Monounsaturated fatty acids that promote healthy levels of good cholesterol or "HDL". It also reduces triglyceride levels, which aides in better glucose management for a person with Diabetes.

● Magnesium, which protects against high blood pressure and supports healthy muscles and bones.

● Copper, which assists in energy production and provides flexibility in blood vessels, bones and joints.

Pretty amazing stuff. Keeping yourself fueled with foods that actually nurture you can work wonders.
